That's normal, the PMDG loader and FsPax loader are totally separated and unable to read information from each other.
Solution: set pax number in FsPax loader AND in PMDG loader if you want weight update.
It's better to disable FsPassengers weight update in this case. The PMDG loader will take care of this.
