Changing Class Model

I believe everyone knows that you can configure a cabin in a real world aircraft into 1, 2, 3, or even 4 classes.
I fly the CLS 767 and was curious if I can change the model into a 2 or even 1 class instead of 3, this would allow me to fill my plane up even
more and thus make more money I would imagine. Thanks
