Adrian, without sounding too terse, I did give you a straight answer. I do suggest that you read all documentation provided.
No, you don't have to set a transponder code if you don't want to. FsP is not going to ding you on points if you land at another airport as long as
you declare an emergency within FsP. As far as ATC goes, I wouldn't spend much time worrying about ATC during an emergency...unless you are that hung
up about what ATC wants you to do. In an emergency, you fly the airplane first....navigate then communicate.
As stated previously, land at the nearest suitable airport. Land on any runway of your choosing.
