I've always enjoyed KPGA to/from KGCN at dawn flying VFR. Great way to start the morning over the canyon.
Another fun one is coming home to KPDX from the east at sunset through the Columbia Gorge.
I also like KPGA to KSLC, staying east of the mountains until cutting through a pass VFR. It's just beautiful country.
