Surprise
I usually fly my flights looking at the mini panel.
I do this as I can see the mountains better so I do not run into them
Surprise this came up after landing

one engine sustained some damage shortly after take-off due to a bird strike. The oil temperature started to increase gradually fortunately, the plane
landed before the engine shutdown. There was an exceptional pilot on board and despite the dire situation he was able to land the aircraft safely.

Although I herd the co pilot make many anounsements but he never declared a emergency.

Because your engine never shut down!

The copilot only announce the failure when the engine shuts down ( "Aooh Captai, an engine flamed out" ) . But nothing before.

The pilot is supposed to watch his engine instruments and detect here that something goes wrong, declare and emmergency etc. If the
pilot does not detect the failure by watching the panel, there are two scenarios:

1) The engine flames out and then, there is a copilot announce
2) You land before engine flames out and then the copilot don't anounce anything about this and you find it in the incident report

If you have enabled failures in FsP, than you are supposed to check all of your instruments from time to time, because engines and other
systems are a subject to multiple failures.
You may fly with mini panel, but in this case, at least switch to the full panel occasionally, like some 2 minutes after takeoff, and then once
for every 15 minutes, to see if engines are ok, if you have no fuel leak, e.t.c.
Please note, that your co-pilot will warn you if something goes wrong in most cases (not always), but it is you duty to declare an
emergency. You are the captain after all, and no one else can make this decision for you.
