I fly while I am at work as well, I use VNC to take off from home remotely, it's tricky but possible, take off's with no joystick is a challenge
but just a quick touch of the up arrow key then hit auto pilot and your away.

Flight is approx 4 hours so just set the food up and drinks, and let it fly, flying to Quebec, Canada, I am currently flying accross Canada
stoping every 4 hours, then flying to UK from Quebec, I am hoping to make it in a EasyJet A319
