I notice that some third party aircraft are over MTOW with 100% fuel and 0 passengers. Any ideas on how to fix this?

Edit the aircraft.cfg file.

Check your airplane doc's, maybe that is really how that plane is. I would try to check the aircraft in FS without FSpassengers first to find
what fuel load can be without passengers. Maybe download a different payload model.

Another facet of this game is fuel planning. Using the performance charts of the particular aircraft you can calculate winds aloft against
your true airspeed and rated fuel consumption for a given TOW to plan your fuel load, like IRL. It's very educational and difficult.

The more realistic third-party aircraft usually are designed with this in mind.
