In reality when an aircraft declares an emergency, a lot of things are involved for the passengers safety: emergency services, search and rescue, not to mention all the flight plans of other aircraft in the area that may be affected to allow you to land as soon as possible, etc. This all has a cost, therefore, un-declaring an emergency is not possible.
