I would want something that is not too costly to maintain but fun to fly.

that's a very loaded and complex question. before you can figure out what plane to fly, you need to figure out what you want to do with it. is it going to be a money making plane? a personal plane to take family and friends places? a personal plane to play around in? a commuter? or do you not want to own a plane and rather fly a plane for a company?
need to have a lot more information before anyone could suggest an aircraft for you. I mean, I could suggest buying a gulfstream 650 right now, but something tells me you cant afford a 65million dollar airplane and you have a long way to go before you're ready to get a type rating in that aircraft.

A good starter? Possibly a clip winged Cub I put a number of hours on one years ago. Fun little airplane indeed for flying low and slow.

I'm not too fond about getting a taildragger, I don't want to spin out on the ground xD

how about a Van's RV-8? 180hp motor with a constant speed prop. 22-axis autopilot. 160mph cruise only burning 7.5gph
